Ingredients

For the Chicken Marinade
  • 2 boneless skinless chicken breasts (about 400–450g)
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1 teaspoon lime zest
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Taco Filling
  • 8 –10 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • ½ red onion finely sliced
  • ½ cup shredded cheddar or Mexican blend cheese
For the Sauce (Optional but Recommended)
  • ½ cup plain yogurt or sour cream
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro
  • Pinch of salt

Method

  1. In a bowl, mix olive oil, lime juice, zest, garlic, and spices, then coat the chicken evenly and let it marinate for at least 15 minutes so the flavors fully absorb.
  2. Heat a skillet over medium heat and cook the chicken for 6–7 minutes on each side until fully cooked, then let it rest before slicing to retain juices.
  3. In a small bowl, combine yogurt or sour cream with lime juice, cilantro, and salt, mixing until smooth for a balanced, creamy sauce.
  4. Warm tortillas in a dry pan for about 30 seconds per side until soft and pliable, ensuring they won’t crack during assembly.
  5. Assemble tacos by adding chicken, lettuce, tomatoes, onion, cheese, and sauce, distributing ingredients evenly for balanced flavor.
  6. Serve immediately while warm, adding a final squeeze of lime juice to enhance freshness and overall taste.

Notes

  • Marinating the chicken longer allows the citrus and spices to penetrate deeper, giving you a more flavorful and tender result.
  • Resting the chicken after cooking helps redistribute juices, preventing dryness when slicing.
  • Keeping tortillas warm ensures they stay soft and flexible, improving both texture and presentation.
  • Using fresh lime juice instead of bottled makes a noticeable difference in brightness and flavor.
