Ingredients
  

For the Sugar Cookie Base
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
For the Fruit Topping
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and sliced
  • 1 cup mandarin orange segments or other seasonal fruits

Method
 

  1. Cream butter and sugar for 2–3 minutes, then add egg and vanilla. Mix in flour, baking powder, and salt until dough forms.
  2. Preheat the oven to 350°F (175°C). Shape dough into 1-inch balls, flatten slightly, leaving space to spread.
  3. Bake cookies 12–15 minutes until edges are lightly golden; cool on a wire rack.
  4. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla until creamy.
  5. Spread frosting on cooled cookies evenly.
  6. Arrange sliced fruits on top, starting with larger pieces, filling gaps with smaller fruits.
  7. Chill cookies 10–15 minutes before serving.
