Ingredients

Dry Ingredients
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract
Optional Add-ins
  • ½ cup chopped walnuts or pecans
  • cup chocolate chips
  • 2 tablespoons pumpkin seeds for topping

Method

  1. Preheat the oven to 180°C and prepare a muffin tin with liners to ensure even baking and easy removal.
  2. Whisk dry ingredients together thoroughly to distribute leavening and spices evenly.
  3. Mix wet ingredients until smooth to create a consistent base that blends easily.
  4. Combine wet and dry mixtures gently, avoiding overmixing to maintain a soft texture.
  5. Fold in optional add-ins and portion batter evenly into muffin cups for uniform baking.
  6. Bake until a toothpick comes out clean, ensuring muffins are cooked through without drying.
  7. Cool briefly in the pan, then transfer to a rack to prevent sogginess and set structure properly.

Notes

  • Always use pure pumpkin puree because flavored fillings can alter both sweetness and consistency.
  • Keep mixing minimal once the flour is added to avoid tough muffins and preserve tenderness.
  • Measure flour correctly using the spoon-and-level method to prevent dense results.
  • Let muffins cool properly so their internal texture stabilizes and doesn’t become gummy.
