Ingredients

  • 1 ½ pounds fresh green beans
  • 1 small yellow onion
  • 8 oz mushrooms
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups whole milk
  • ½ cup heavy cream
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 ½ cups crispy fried onions

Method

  1. Blanch green beans 4–5 minutes, then ice bath.
  2. Sauté onion and mushrooms in butter 6–8 minutes.
  3. Add flour, cook 1–2 minutes, whisk in milk and cream, simmer until thick.
  4. Combine beans and sauce in baking dish.
  5. Bake at 375°F for 20 minutes, add topping, bake 8–10 more minutes.

Notes

  • You can use frozen green beans if fresh are not available, but thaw and pat them dry first to prevent excess moisture.
  • If using canned green beans, reduce baking time by 5–7 minutes since they are already soft.
  • For extra flavor, add ½ teaspoon smoked paprika or a splash of Worcestershire sauce to the cream sauce.
