Ingredients
  

For the Dough
  • cups all-purpose flour
  • ¾ cup pumpkin puree
  • ¼ cup warm milk
  • ¼ cup granulated sugar
  • teaspoons active dry yeast
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
For the Cinnamon Filling
  • ½ cup brown sugar
  • 2 tablespoons cinnamon
  • ¼ teaspoon nutmeg
  • ¼ cup unsalted butter, softened
For the Cream Cheese Glaze
  • 4 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 1–2 tablespoons milk

Method
 

  1. Activate yeast in warm milk and sugar.
  2. Mix in pumpkin, butter, egg, and dry ingredients.
  3. Knead dough until smooth.
  4. Let dough rise until doubled.
  5. Roll out, add filling, and shape rolls.
  6. Let the rolls rise again.
  7. Bake at 180°C for 20–25 minutes.
  8. Prepare glaze and spread over warm rolls.

Notes

  • Use fresh yeast for best rise
  • Keep dough slightly sticky for softness
  • Don’t rush rise times
  • Apply glaze while warm
  • Avoid overbaking
