Ingredients

For the Pizza Base
  • 1 (about 300–350g) ready-made pizza dough
  • 2 tablespoons all-purpose flour (for dusting)
For the BBQ Chicken Topping
  • 1 cup cooked chicken breast, shredded
  • ½ cup BBQ sauce (smoky variety preferred)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
For the Pizza Assembly
  • 1 cup mozzarella cheese, shredded
  • ½ cup cheddar cheese, shredded
  • ½ small red onion, thinly sliced
  • ¼ cup sweet corn (optional but recommended)
  • 1 tablespoon olive oil
For Garnishing
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon BBQ sauce (for drizzling)

Method

  1. Preheat your oven to 220°C and stretch the pizza dough evenly on a floured surface to ensure even cooking and a balanced crust texture.
  2. Mix shredded chicken with BBQ sauce and spices until fully coated, ensuring consistent flavor in every bite.
  3. Place the dough on a tray, brush with olive oil, and spread a thin layer of BBQ sauce to create a flavorful base.
  4. Add cheese, BBQ chicken, onions, and corn evenly across the surface to maintain balance and proper cooking.
  5. Bake for 15–18 minutes until the crust is golden and the cheese is bubbling, rotating halfway through for even baking.
  6. Let the pizza rest briefly before garnishing and slicing to keep toppings intact and improve presentation.

Notes

  • Letting the dough rest if it resists shaping helps you avoid tearing and makes it easier to work with.
  • Warming the chicken slightly before mixing enhances flavor absorption and creates a richer taste.
  • Using a light hand with sauce prevents sogginess and keeps the crust crisp.
  • Rotating the pizza during baking ensures even heat distribution and avoids burnt spots.
