Ingredients
  

  • 2 lbs chicken thighs
  • 3 tbsp olive oil
  • 3 tbsp Greek yogurt
  • Juice of 1 lemon
  • 4 garlic cloves
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp turmeric
  • 1 tsp coriander
  • ½ tsp cinnamon
  • ½ tsp cayenne
  • 1 tsp salt
  • ½ tsp black pepper

Method
 

  1. Mix marinade ingredients.
  2. Coat chicken and marinate 1–8 hours.
  3. Preheat oven to 400°F.
  4. Roast 20–25 minutes.
  5. Rest and slice before serving.

Notes

  • For deeper flavor, marinate the chicken overnight. The longer marination helps the spices fully penetrate the meat.
  • If you prefer extra char like traditional street-style shawarma, broil the chicken for the last 2–3 minutes of cooking.
  • Always let the chicken rest before slicing. Cutting too early releases juices and can make the meat dry.
