- Combine salmon, egg, breadcrumbs, onion, parsley, mustard, lemon juice, garlic powder, salt, and pepper in a bowl.
- Mix gently until ingredients are evenly combined.
- Divide mixture and shape into eight patties.
- Heat olive oil in a skillet over medium heat.
- Cook patties for 4–5 minutes on the first side.
- Flip and cook for another 3–4 minutes until golden brown.
- Drain briefly on paper towels and serve warm.
