  • 2 pounds sweet potatoes (about 3–4 medium) peeled and cut into 1-inch cubes
The Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
Optional Finishing Touches
  • ½ teaspoon dried thyme or rosemary
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Preheat the oven to 425°F and line the baking sheet with parchment paper.
  2. Peel and cube sweet potatoes into 1-inch pieces.
  3. Toss with olive oil, salt, pepper, paprika, and garlic powder.
  4. Spread in a single layer on a baking sheet.
  5. Roast 15 minutes, flip, and roast 10–15 more minutes until tender and caramelized.
  6. Rest 3–5 minutes, garnish, and serve.

Notes

  • Cut evenly sized cubes for consistent cooking.
  • Don’t overcrowd the pan.
  • Flip halfway for even browning.
  • Roast at high heat for better caramelization.
