  • 1 teaspoon dried rosemary or thyme

Method
 

  1. Preheat the oven to 425°F (220°C). Cut potatoes into 1-inch chunks.
  2. Pat potatoes dry thoroughly.

  4. Spread in a single layer on a lined baking sheet.
  5. Roast 20 minutes, flip, then roast 15–25 minutes more until golden and fork-tender.
  6. Rest 5 minutes, garnish, and serve.
