Ingredients
  

Dry Ingredients
  • 1 ¾ Cups All-purpose flour
  • 1 tsp Baking soda
  • ½ tsp Baking powder
  • ½ tsp Salt
  • 1 ½ tsp Ground cinnamon
  • ½ tsp Ground nutmeg
  • ¼ tsp Ground cloves
Wet Ingredients
  • 1 Cup Pumpkin puree (not pumpkin pie filling)
  • ¾ Cup Granulated sugar
  • ¼ Cup Brown sugar
  • ½ Cup Vegetable oil
  • 2 Large Eggs
  • ¼ Cup Milk
  • 1 tsp Vanilla extract
Optional Add-ins
  • ½ Cup Chopped walnuts or pecans
  • ¼ Cup Chocolate chips

Method
 

  1. Preheat the oven to 175°C and prepare a loaf pan with grease or parchment for easy release and even baking.
  2. Whisk dry ingredients together thoroughly to ensure even distribution of leavening and spices.
  3. Mix wet ingredients until smooth and fully combined to create a consistent base for the batter.
  4. Combine wet and dry mixtures gently, stirring just until incorporated to maintain a tender crumb.
  5. Pour batter into the pan and bake until a toothpick comes out clean, ensuring the bread is fully cooked.
  6. Cool in the pan briefly, then transfer to a rack to cool completely before slicing for the best texture.

Notes

  • Always measure flour correctly using the spoon-and-level method to avoid a dense loaf caused by excess flour.
  • Use room temperature eggs so they blend more smoothly into the batter and improve texture.
  • Do not skip resting time after baking because it allows the crumb to set properly and slice cleanly.
