Ingredients
  

For the Chicken
  • pounds boneless, skinless chicken breast cut into bite-sized pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon cornstarch
For the Pineapple Sauce
  • 1 cup pineapple chunks (fresh or canned, drained)
  • ¾ cup pineapple juice
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
For the Rice
  • cups long-grain white rice
  • 3 cups water or chicken broth
  • ½ teaspoon salt
For Cooking
  • 2 tablespoons neutral oil
  • 1 red bell pepper, sliced
  • ½ cup diced onion
  • 2 cloves garlic, minced

Method
 

  1. Toss chicken with salt, pepper, garlic powder, and cornstarch.
  2. Cook rice according to package directions and set aside.
  3. Sear chicken in oil over medium-high heat until golden and cooked through; remove from pan.
  4. Sauté onion and bell pepper, then add garlic and ginger.
  5. Stir in pineapple juice, soy sauce, honey, vinegar, and pineapple; simmer until slightly thickened.
  6. Return chicken to pan, coat in sauce, and serve over rice.
