Ingredients

Wet Ingredients
  • 1 cup ripe persimmon pulp
  • ¾ cup brown sugar
  • ½ cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional Add-ins
  • ½ cup chopped walnuts
  • ½ cup raisins

Method
 

  1. Mash ripe persimmons into pulp.
  2. Mix dry ingredients.
  3. Cream butter and sugar.
  4. Add persimmon pulp, egg, and vanilla.
  5. Combine with dry ingredients.
  6. Scoop onto baking tray and bake.
