Ingredients
  

For the Soup Base
  • 1 Tsp Olive oil
  • 1 Medium Onion, finely chopped
  • 3 Cloves Garlic, minced
  • 500 Gram Ground beef or ground chicken
  • 2 Tbsp Tomato paste
  • 1 (400 g) Can Crushed tomatoes
  • 4 Cups Chicken or vegetable broth
  • 1 Tsp Dried oregano
  • 1 Tsp Dried basil
  • ½ Tsp Chili flakes (optional)
  • Salt and black pepper to taste
For the Pasta
  • 8 Sheets Lasagna, broken into bite-sized pieces
For the Creamy Topping
  • 1 Cup Ricotta cheese
  • ½ Cup Grated mozzarella cheese
  • ¼ Cup Grated Parmesan cheese
  • 2 Tbsp Fresh parsley, chopped

Method
 

  1. Heat olive oil in a large pot and cook chopped onion until soft, then add garlic and cook until fragrant to build a strong flavor base.
  2. Add ground meat and cook until browned, allowing it to develop a rich and slightly caramelized taste.
  3. Stir in tomato paste, then add crushed tomatoes, broth, and seasonings, bringing everything to a gentle boil.
  4. Reduce heat and let the soup simmer to deepen the flavor and blend all ingredients properly.
  5. Add broken lasagna sheets and cook until just tender while stirring occasionally to prevent sticking.
  6. Prepare the cheese mixture and add a generous spoonful to each serving for a creamy finish.
