Ingredients
  

Chicken
  • 8 chicken drumsticks, skin-on
  • 1 tablespoon olive oil
Marinade & Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon dried thyme or rosemary
  • ½ teaspoon chili flakes (optional, for mild heat)
  • 1 tablespoon lemon juice
Optional Garnish
  • Fresh parsley, chopped
  • Lemon wedges

Method
 

  1. Pat chicken dry for crisp skin.
  2. Mix olive oil, garlic powder, onion powder, smoked paprika, salt, pepper, herbs, chili flakes, and lemon juice.
  3. Rub marinade over drumsticks evenly. Let rest for 10 minutes.
  4. Preheat the oven to 400°F (200°C), prepare a tray with foil or parchment. Arrange drumsticks spaced apart.
  5. Bake for 35–40 minutes, flipping halfway. Chicken is done at 165°F (74°C).
  6. Rest chicken 5–10 minutes before serving.
  7. Garnish with parsley and lemon wedges, serve with sides of choice.

  • Dry chicken thoroughly to achieve crispy skin.
  • Massage marinade under the skin for deeper flavor.
  • Use a wire rack for more even browning.
