Homemade Pumpkin Pie Recipe from Scratch

Ingredients
  

For the Pie Crust
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter cold and cubed
  • 3 –4 tablespoons ice water
For the Pumpkin Filling
  • 1 ¾ cups pumpkin puree fresh or canned
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 cup heavy cream
  • ½ cup whole milk
  • 1 teaspoon vanilla extract
Spices for Flavor
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt

Method
 

  1. Make the pie dough and chill it.
  2. Roll out the dough and shape it into a pie dish.
  3. Whisk together pumpkin filling ingredients.
  4. Pour filling into crust and bake at 375°F for 45–50 minutes.
  5. Cool completely before slicing and serving.

Notes

  • For the best flavor, use pure pumpkin puree instead of pumpkin pie filling. This gives you full control over sweetness and spice.
  • Make sure the pie dough stays cold before baking so the crust turns flaky instead of dense.
  • If the crust edges start browning too quickly, loosely cover them with aluminum foil during the last 15 minutes of baking.
  • Allow the pie to cool for at least 2 hours before slicing. Cutting it too soon can make the filling runny.
