French Onion Chicken Orzo Casserole

Ingredients
  

  • 2 chicken breasts
  • 3 onions
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 cup orzo
  • 2 cups chicken broth
  • 1 cup milk
  • ½ cup heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 ½ cups Gruyère
  • ½ cup mozzarella

Method
 

  1. Caramelize onions 18–20 minutes.
  2. Cook chicken 5–7 minutes.
  3. Add orzo and liquids; simmer 5–6 minutes.
  4. Transfer to baking dish and add cheese.
  5. Bake 20–25 minutes at 375°F.

Notes

  • Take your time caramelizing the onions. Deep golden color equals deeper flavor.
  • If the mixture looks too thick before baking, add 2–3 tablespoons of warm chicken broth to loosen it slightly.
  • For extra flavor, add ½ teaspoon Dijon mustard to the sauce.
  • Let the casserole rest for 5 minutes after baking so the sauce thickens properly.
  • You can assemble the casserole up to 24 hours in advance, refrigerate, and bake just before serving.
