Fluffy Dinner Rolls Recipe

Freshly baked dinner rolls change the entire feel of a meal, especially when they come out of the oven golden, buttery, and incredibly soft inside.
Prep Time 25 minutes
Cook Time 20 minutes
Rise Time 1 hour 30 minutes
Total Time 2 hours 15 minutes
Servings: 12 rolls

Ingredients

For the Dough
  • 4 cups all-purpose flour plus extra for dusting
  • 2 1/4 teaspoons active dry yeast 1 packet
  • 1 cup warm whole milk about 110°F
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 large egg
  • 1/4 cup unsalted butter softened
  • 2 tablespoons vegetable oil
For Brushing
  • 2 tablespoons melted butter
  • Pinch of flaky salt optional

Method

  1. Mix warm milk, sugar, and yeast in a large bowl and let it sit until foamy. Add egg, butter, oil, and salt before gradually mixing in flour to form a soft dough.
  2. Knead the dough for about 8–10 minutes until smooth and elastic. The dough should feel soft and slightly tacky rather than dry.
  3. Place the dough into a greased bowl, cover it, and let it rise until doubled in size, about 1 hour depending on room temperature.
  4. Divide the dough into 12 equal pieces and shape into smooth balls. Arrange them in a greased baking dish and let them rise again until puffy.
  5. Bake at 375°F for 18–20 minutes until golden brown. Brush the hot dinner rolls with melted butter immediately after baking for extra softness.
  6. Cool slightly before serving so the inside texture finishes setting while staying soft and fluffy.

Notes

  • Warm milk helps activate yeast properly, but overheating it can stop the dough from rising, so always check the temperature carefully before mixing.
  • Kneading the dough thoroughly creates the gluten structure needed for soft and fluffy dinner rolls, which is why rushing this step often affects texture.
  • Letting the dough rise in a warm environment encourages better volume and lighter bread, especially in cooler kitchens where yeast works more slowly.
  • Brushing the baked rolls with melted butter immediately after baking keeps the tops soft and gives the homemade bread a rich finish.
