  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ¼ red onion, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 2 tablespoons fresh mint, chopped
Dressing
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
Optional Add-Ins
  • ¼ cup crumbled feta cheese
  • ¼ cup olives, sliced
  • ¼ cup chickpeas (cooked)

Method
 

  1. Add couscous to a bowl, pour boiling water or broth over it, cover, and let sit for 5 minutes until absorbed. This ensures the grains soften properly without overcooking.
  2. Fluff couscous with a fork and allow it to cool for 10 minutes so it doesn’t affect the texture of fresh ingredients.
