Ingredients
  

Protein Base
  • 500g chicken breast or chicken thighs, cut into bite-sized pieces
  • 1 cup canned white beans or chickpeas (optional for extra protein)
Vegetables
  • 2 medium carrots, sliced into rounds
  • 2 celery stalks, chopped
  • 1 medium onion, finely chopped
  • 3 medium potatoes, diced into cubes
  • 1 cup sweet corn kernels
Liquid Base
  • 1 liter chicken or vegetable broth (low sodium preferred)
  • 1 cup water (adjust for desired thickness)
Seasoning & Flavor
  • 3 cloves garlic, minced
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf
Optional Finishing Touches
  • Fresh parsley, chopped
  • 2 tablespoons cream or coconut milk for creaminess
  • Lemon juice for brightness

Method
 

  1. Prepare and chop all vegetables evenly and place them in the crockpot with chicken and optional beans.
  2. Add garlic, herbs, spices, and bay leaf evenly across the mixture.
  3. Pour broth and water until ingredients are just covered, then gently stir.
  4. Stir in cream or coconut milk if desired and adjust seasoning before serving.
  5. Let rest briefly before serving to allow flavors to settle properly.

Notes

  • Avoid lifting the lid frequently as it slows down the slow cooking process and affects texture.
  • Mash a few potatoes in the pot to naturally thicken the soup without adding flour or starch.
  • Add lemon juice at the end to brighten flavors and balance richness.
