Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 2 large cucumbers thinly sliced
  • ¼ cup red onion thinly sliced
  • 2 tbsp fresh dill chopped
  • ½ cup Greek yogurt or mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder

Method
 

  1. Bring a pot of lightly salted water to a boil and cook shrimp for 2–3 minutes until pink.
  2. Drain shrimp and rinse under cold water to cool completely.
  3. In a bowl, whisk yogurt (or mayo), lemon juice, olive oil, salt, pepper, and garlic powder.
  4. Add cucumbers, red onion, dill, and cooled shrimp to the bowl.
  5. Toss gently until evenly coated and chill before serving.

Notes

  • Chill for 15–20 minutes for best flavor.
  • Swap Greek yogurt for mayo for a lighter version.
  • Add avocado or cherry tomatoes for extra freshness.
