Ingredients

For the Chicken Marinade
  • 2 large boneless chicken breasts (halved into 4 fillets)
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
For the Crispy Coating
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper (optional)
For Frying
  • 2 cups vegetable oil
For Assembling the Sandwich
  • 4 burger buns
  • 4 lettuce leaves
  • 1 large tomato (sliced)
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • Pickles (optional)

Method

  1. Marinate the chicken in seasoned buttermilk for at least 30 minutes to tenderize and infuse flavor.
  2. Prepare a seasoned flour mixture with cornstarch and spices, ensuring even distribution for consistent coating.
  3. Coat each chicken piece thoroughly, pressing the flour mixture firmly so it adheres well.
  4. Heat oil to the correct temperature and fry the chicken until golden and cooked through, maintaining steady heat.
  5. Let the chicken rest on a rack to preserve crispiness.
  6. Toast buns lightly and assemble the sandwich with sauces, vegetables, and crispy chicken just before serving.

Notes

  • Allow enough marination time so the chicken stays juicy and flavorful after frying.
  • Maintain proper oil temperature to achieve a crisp, non-greasy coating.
  • Use a wire rack after frying to keep the crust intact and crunchy.
  • Toast buns lightly to prevent sogginess and enhance texture.
