Ingredients

Protein & Base
  • 2 (about 450–500g) boneless, skinless chicken breasts
  • 2 cans (400g each) white beans (cannellini or great northern), drained and rinsed
  • 4 cups chicken broth
Aromatics & Flavor
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili flakes (adjust to taste)
  • Salt and black pepper to taste
Creamy Elements
  • ½ cup cream cheese, softened
  • ½ cup heavy cream (or milk for a lighter option)
Fresh Additions & Garnish
  • 1 small green chili or jalapeño, finely chopped
  • 1 lime Juice
  • ¼ cup fresh cilantro, chopped

Method

  1. Heat oil and sauté onion until soft, then add garlic.
  2. Stir in spices and coat chicken with the mixture.
  3. Add broth and simmer until chicken is cooked through.
  4. Remove and shred chicken, then return it to the pot.
  5. Add beans, cream cheese, and cream; stir until smooth.
  6. Finish with lime juice, chili, and cilantro before serving.

Notes

  • Allowing the onions to cook slowly builds a deeper flavor base that makes the chili taste richer without extra ingredients.
  • Keeping the heat gentle during simmering ensures the chicken stays tender and doesn’t dry out.
  • Cutting cream cheese into smaller pieces helps it melt evenly, preventing lumps in the final dish.
  • Adding fresh lime juice at the end brightens the entire dish and balances the creamy texture perfectly.
