Aromatics
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
Broth & Cream
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
Pasta & Vegetables
  • 9 oz cheese tortellini (fresh or refrigerated)
  • 2 cups fresh spinach (or kale)
  • 1 cup diced tomatoes (canned or fresh)
Seasoning
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
Garnish
  • Grated Parmesan cheese
  • Fresh parsley (optional)

Method
 

  1. Cook sausage until browned.
  2. Add onion and garlic; sauté.
  3. Pour in broth and tomatoes; simmer.
  4. Stir in cream, milk, and seasoning.
  5. Add tortellini and cook.
  6. Stir in spinach and serve.

Notes

  • Brown sausage well for flavor
  • Keep heat low after adding cream
  • Don’t overcook tortellini
  • Add greens at the end
  • Adjust thickness with broth if needed
