Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
Vegetables
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups fresh spinach, roughly chopped
Liquid & Base
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup milk
Gnocchi & Starch
  • 1 pound potato gnocchi (store-bought or homemade)
Seasoning & Herbs
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • Optional garnish: grated Parmesan, chopped parsley

Method
 

  1. Sauté onions, carrots, and celery in olive oil until softened, then add garlic for 30 seconds.
  2. Add chicken pieces and brown lightly for flavor.
  3. Pour in chicken broth and herbs, simmer for 10–12 minutes.
  4. Stir in gnocchi and cook until they float.
  5. Add cream, milk, and spinach, cooking until wilted and creamy.
  6. Adjust seasoning to taste.
  7. Serve with Parmesan and parsley garnish.
