Ingredients

  • 1 9- inch pie crust homemade or store-bought
  • 1 tablespoon butter melted (optional for brushing)
For the Lemon Filling
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • ¼ teaspoon salt
  • cups water
  • 2 lemons zested and juiced (about ½ cup juice)
  • 2 tablespoons unsalted butter
  • 4 egg yolks lightly beaten
For the Meringue Topping
  • 4 egg whites
  • 6 tablespoons granulated sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cream of tartar

Method
 

  1. Bake pie crust.
  2. Cook lemon filling.
  3. Temper egg yolks and thicken custard.
  4. Fill crust with lemon mixture.
  5. Whip meringue topping.
  6. Bake until golden and cool before serving.
