Ingredients

Base Layer
  • 1 large bag (300–350g) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
Protein Layer
  • 250g ground beef (or chicken)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
Fresh & Flavorful Toppings
  • 1 cup canned black beans (drained and rinsed)
  • 1 cup sweet corn kernels
  • 1 medium tomato, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, sliced
Creamy Finishes
  • ½ cup sour cream
  • ½ cup guacamole
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Method

  1. Heat oil and cook ground beef for 6–8 minutes until browned, then add spices and cook for another 2 minutes to develop flavor.
  2. Preheat the oven to 180°C and spread half the tortilla chips evenly on a baking tray, followed by half the cheese.
  3. Add half the cooked meat, beans, and corn, then repeat layers with remaining ingredients for balanced distribution.
  4. Bake for 10–12 minutes until the cheese is melted and bubbling without overcooking.
  5. Remove from the oven and top with fresh ingredients like tomatoes, onion, jalapeños, sour cream, and guacamole before serving.

Notes

  • Cook the meat until slightly crisp to enhance the depth of flavor rather than stopping at basic browning.
  • Layer ingredients evenly so every chip gets a balanced mix of toppings instead of leaving some dry.
  • Use freshly grated cheese because it melts more smoothly and gives a better texture.
  • Add fresh toppings only after baking to keep them vibrant and prevent sogginess.
