  • 2 cups cooked shredded chicken breast
  • 8 small corn tortillas
  • 1 tablespoon olive oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
Sauce and Flavor Ingredients
  • 1 can (10 oz) red enchilada sauce
  • 1 cup canned diced tomatoes drained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Cheese and Creamy Layer
  • cups cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • ½ cup sour cream
Optional Toppings
  • ¼ cup cilantro chopped
  • ½ cup green onions sliced
  • 1 diced avocado
  • Fresh lime wedges

Method
 

  1. Preheat the oven to 375°F and grease a 9x13 baking dish.
  2. Cook diced onion in olive oil for 4–5 minutes, then add garlic and cook briefly.
  3. Stir in enchilada sauce, tomatoes, and spices and simmer for 5 minutes.
  4. Add shredded chicken and sour cream and mix until creamy.
  5. Layer tortillas, chicken mixture, and cheese in a baking dish.
  6. Bake for 25–30 minutes until the cheese melts and the top is bubbly.
