Ingredients
  

For the Meatloaf Base
  • 1 ½ pounds ground beef (80/20 for best flavor and juiciness)
  • 1 cup breadcrumbs (plain or panko)
  • 2 large eggs
  • ½ cup milk
Cheeseburger Flavor Boosters
  • 1 cup shredded cheddar cheese
  • ½ cup finely diced onion
  • ¼ cup diced dill pickles or pickle relish
  • 2 tablespoons yellow mustard
  • 2 tablespoons ketchup
  • 1 teaspoon salt
  • ½ teaspoon black pepper
For the Topping
  • ¼ cup ketchup
  • 1 tablespoon mustard
  • 1 tablespoon brown sugar

Method
 

  1. Preheat oven to 375°F and grease or line a loaf pan.
  2. Whisk eggs, milk, ketchup, and mustard in a bowl.
  3. Stir in breadcrumbs, onion, pickles, salt, and pepper.
  4. Gently mix in ground beef and cheddar until just combined.
  5. Shape into loaf, spread topping mixture over top, and bake 55–60 minutes until internal temp reaches 160°F. Rest before slicing.
