Prep Time 20 minutes
Total Time 35 minutes
Servings: 18 Cookies

Ingredients

Dry Ingredients
  • 2 Cups All-purpose flour
  • 1 Tsp Baking soda
  • ½ Tsp Baking powder
  • ½ Tsp Salt
  • 1 Tsp Ground cinnamon
  • ¼ Tsp Ground nutmeg
Wet Ingredients
  • ½ Cup Unsalted butter, softened
  • ¾ Cup Brown sugar, packed
  • ¼ Cup Granulated sugar
  • 1 Large Egg
  • 1 Tsp Vanilla extract
Apple and Caramel Add-ins
  • 1 Cup Fresh apple, peeled and finely diced (Honeycrisp or Granny Smith works well)
  • ¾ Cup Soft caramel bits or chopped soft caramels
  • ½ Cup White chocolate chips (optional but recommended for balance)

Method

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg to evenly distribute the dry ingredients and spices.
  2. In a large bowl, beat softened butter with brown sugar and granulated sugar until light and fluffy. This process incorporates air into the dough and helps create a soft cookie texture.
  3. Add the egg and vanilla extract to the butter mixture and mix until fully smooth and combined. Ensuring the egg is completely blended helps the dough bake evenly.
  4. Slowly add the dry ingredient mixture into the wet mixture while stirring gently. Continue mixing until a thick dough forms without visible streaks of flour.
  5. Fold in finely diced apples, caramel bits, and white chocolate chips. Mix gently so the add-ins distribute evenly without overworking the dough.
  6. Scoop cookie dough onto the prepared baking sheet, leaving space between each portion. Bake for 12–14 minutes until the edges turn lightly golden.
  7. Let the cookies rest on the baking sheet for several minutes before transferring to a cooling rack so they set properly.

Notes

  • Always dice apples very finely because smaller pieces bake more evenly and prevent cookies from becoming too moist in the center.
  • Allow the dough to rest briefly if it feels sticky. A short chill helps control cookie spread and improves the final chewy texture.
  • Slightly underbake the cookies for the best softness since residual heat continues cooking them after they leave the oven.
  • Use fresh apples rather than canned apples because fresh fruit provides better texture and balanced sweetness.
