Total Time 15 minutes
Servings: 4 Serving

Ingredients

Fresh Base
  • 4 cups fresh broccoli florets (cut into small bite-sized pieces)
  • 1/2 cup red onion (finely diced)
  • 1/2 cup shredded carrots
Crunch & Add-Ins
  • 1/3 cup sunflower seeds
  • 1/3 cup roasted peanuts or almonds (roughly chopped)
  • 1/2 cup dried cranberries or raisins
Creamy Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons plain yogurt (for balance)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method

  1. Wash and cut broccoli into small, bite-sized florets so they mix evenly and are easy to eat.
  2. Dice onion, shred carrots, and chop nuts to build layers of texture throughout the salad.
  3. Whisk together mayonnaise, yogurt, vinegar, honey, salt, and pepper until smooth and balanced.
  4. Combine all ingredients in a large bowl and toss thoroughly so every piece is coated with dressing.
  5. Chill the salad for at least 20 minutes to allow flavors to develop and the broccoli to soften slightly.
  6. Toss again before serving and adjust seasoning if needed for a balanced final taste.

Notes

  • Cutting smaller florets helps the dressing coat evenly, improving overall flavor distribution.
  • Soaking onions briefly in cold water reduces sharpness while keeping their crunch intact.
  • Always taste and adjust the dressing before mixing to avoid overpowering sweetness or acidity.
  • Add extra nuts just before serving to maintain a fresh, crunchy texture after chilling.
