Ingredients
  

Vegetable Base
  • 2 cups green cabbage chopped
  • 1 cup carrots sliced
  • 1 cup celery chopped
  • 1 medium onion diced
  • 1 red bell pepper chopped
  • 1 cup zucchini diced
Flavor Builders
  • 3 cloves garlic minced
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon ground turmeric
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
Liquid Base
  • 1 tablespoon olive oil
  • 4 cups low-sodium vegetable broth
  • 1 14-ounce can diced tomatoes
  • 1 tablespoon lemon juice
  • Salt to taste

Method
 

  1. Sauté onion, garlic, and ginger in oil 3–4 minutes.
  2. Add chopped vegetables and cook 5–6 minutes.
  3. Stir in spices and diced tomatoes.
  4. Add broth and simmer 20–25 minutes.
  5. Finish with lemon juice and adjust seasoning.
