Method
- Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- Spread bread cubes evenly in the dish and layer sliced bananas on top.
- Whisk milk, cream, brown sugar, eggs, vanilla, cinnamon, and salt until smooth.
- Pour custard mixture over bread and press gently to soak. Let sit 10 minutes.
- Bake for 40–45 minutes until set and golden on top.

- Day-old brioche absorbs custard best.
- Let pudding rest 10 minutes before slicing.
- Serve warm with vanilla ice cream for extra indulgence.
